You *can* use a single goCoax WF-803M MoCA 2.5 adapter with the XB7's built-in MoCA bridge to effect the MoCA connection over coax ... but the connection will be limited by the XB7 bridge's MoCA spec, bonded MoCA 2.0, to 800 Mbps (1000 Mbps in a "TURBO" 2-node-only setup).
If wanting/requiring the maximum throughput possible offered by MoCA 2.5 (2000 Mbps shared, 2500 Mbps in a "TURBO" 2-node-only setup), then you'd want to disable the XB7's built-in MoCA bridge (possibly even installing a MoCA filter on the XB7's coax port) and use an additional goCoax adapter, installed at the XB7 gateway location, to function as your main MoCA/Ethernet bridge.
